The Oddyssey Half Marathon is just two days away and I’m pretty pumped for the race in Fairmount Park! Once again, MOH and her hubby are traveling down from the Big Apple so they’re bunking with us the night before the half.
Mr. Dish has graciously taken charge of dinner again (have I told you lately how much I love this man?) so I decided to bake us a sweet snack to help in the carb-loading.
Oatmeal walnut chocolate chip cookies are an homage to my daily breakfast:
I love oatmeal, and any cookie that’s got the whole grain goodness in it sounds a lot healthier than a regular old chocolate chip cookie. Never mind that there’s two sticks of butter and 1.5 cups of brown sugar in there.
The walnuts add a little extra crunch, which I love. If you’re looking for a hearty, chewy cookie but aren’t a fan of raisins, this recipe from Betty Crocker is for you!
So tomorrow I will rest and pray the heat and humidity isn’t too bad on Saturday morning. Aside from my weather-related anxiety, I’m feeling good and ready for 13.1!
